Baked Salt Cod Fritters
These delightful Portuguese-Brazilian fritters offer a healthier, baked version of the traditional deep-fried salt cod croquettes. Crispy on the outside and fluffy on the inside, they combine flaked salt cod with mashed potatoes, fresh herbs, and aromatics for a perfect appetizer or snack.
Ingredients:
500g cooked and shredded salt cod
500g cooked and mashed potatoes
2 tablespoons cassava flour
2 tablespoons chopped parsley
1 small onion, finely chopped
2 eggs
Olive oil for brushing
Instructions:
Mix all ingredients in a bowl.
Form into small fritters by hand and place on a baking sheet lined with a silicone mat or parchment paper. Brush the with Olive oil.
Preheat oven to 180°C/350°F and bake until golden (about 25 minutes). If desired, flip the fritters halfway through to brown both sides.
